When the weather starts getting colder, food that warms your soul is best suited for dinner. Nothing does it better than a good home style bowl of beef stew. Tenderloin vegetable stew consists of thick chunks of potato, carrot and onion mixed in with tenderloin beef and a gravy style base. The base is a mixture of seasoning and wine cooking all together creating a mouth watering gravy like texture bringing the entire meal together as one.
First lets have a look at what we will need:
- 5 medium carrots
- 2 onions
- 5 medium potatoes
- 2 cloves of garlic
- all purpose flower
- salt and pepper
- garlic powder
- vegetable oil
- 1 cup beef broth
First mix a cup of all purpose flour, 2 tbsp of garlic powder, pinch of pepper and salt together into a bowl or bag. We are going to take our meat, cover it in this mix and fry it in olive or vegetable oil. Try to only crisp the sides of the meat, do not cook it fully. This process is what will help thicken our stew.
Once done place the tenderloin and all our vegetables into our cooking pot. Add 1 cup of red wine, 1 cup of beef broth and 1 cup of water, bring to a boil and reduce heat to minimum. Cook for 2 hours or until your carrots and potatoes are cooked, stir once in a while to ensure nothing sticks to the bottom of the pot.
As you cook feel free to add more garlic powder, onion salt and wine so you can reach your desired taste. Serve with homemade Italian bread and in a bowl.
