Tonight’s dinner is inspired by my wife’s mother Sophia, she makes this meal like no one including myself and makes me look like an amateur. I however enjoy it so much I try my best to replicate it. This is a chicken cutlet mashed potato with veggies dinner and it’s just as delicious as it sounds.

First lets have a look at what we will need:

  1. 5 chicken breasts
  2. 4 cloves of garlic
  3. Italian bread crumbs
  4. Two eggs
  5. Parmigiano-reggiano cheese
  6. Vegetable or olive oil
  7. 5 medium potatoes
  8. Head of broccoli
  9. Head of cauliflower

Steps

Clean your chicken breasts tap dry with paper towel and place on a plate. Add your 2 eggs into a bowl and mix until and even consistency. Add your Italian bread crumbs into a separate bowl. Once your chicken is dry, place it into the eggs, from there transfer it into the crumbs ensuring the chicken is fully covered in bread crumbs. Once done place into a hit pan of oil, partially cook both sides until crisp and place onto a baking sheet. Do this with all your chicken and once completed place into the oven at 400 degrees for 20 minutes.

Peel your potatoes and slice them into smaller pieces for easier cooking. Bring a pot of water to boil, add potatoes, 4 cleaned cloves of garlic and a dash of salt. Once cooked strain water, add 2 tbsp of butter or margarine and mix potatoes, garlic and butter together, slowly add cream to make potatoes thick to personal preference.

Serve with steamed vegetables, mashed potatoes and gravy.
